I'm Back and feeling even better!


I just sort of woke up today with this new outlook on life.  Why today?  Maybe I had a good nights sleep? Maybe it was the healthy veggie dinner from last night?  Maybe it's because I am still cancer free and have the greatest husband in the world who cares about and for me.

Another fab smoothie and more!

Wow, wow and wow!  The hubby made a 'super blue' smoothie today for our breakfast! Blueberries, almond milk, banana's, kiwi, cucumbers, strawberries, apples, kale, spinach and love! (I may have missed an item or two) But it sure was blue and good tasting!

Breakfast!

...Mint Chocolate, Fruit and Vegetable Smoothie?  Oh yea....!
Just had the best bowl of Ezekiel 4:9 Sprouted Whole Grain Cereal with Cinnamon / Raisin's with almond milk and then a big glass of smoothie!  
My smoothie included, apples, pears, celery, cucumber, mint, dino-kale, carrot, spinach, tomato, soy milk and pure cacao powder. Sounds sort of all odd and mixed up but when you add the cacao and mint...wow the flavor just beams! 
....And that is breakfast!  
But you ask why cacao in the smoothie?
Did you know it's high in iron, antioxidants and magnesium?  It's true!

Why Mint?
Well I needed to drink the greens and kale and spinach can be gritty and sandy/harsh when you are not used to using them in smoothies.  Chef Aj taught me to add in cacao and mint. It helped to hide the taste and helped me get the nutrients I needed! It was the best suggestion!  Now I can drink all the tough veggies that I didn't really like by adding the mint and cacao when I want my 'fix' of chocolate and mint!  What most of my friends already know about me is that I used to love Chocolate/Chocolate Chip Mint Ice cream.  I cannot have the that anymore but I sure can make a smoothie that reminds me of it.  :-)

365 Days on a Plant-Based Diet

This is me and Luis, in late 2007. Happier times before my cancer.
Today is a new day, a first step, so to speak, in what will be a new beginning for me and my husband. My 365 day plant-based diet.  No processed foods.  Little to no oil. Low salt intake. No junk foods.  No sugar (the big killer many believe!) 

Will it be tough?  You bet...I have been addicted to the wrong foods for far too long.  I have had to look deep inside of myself and see the truth of what I need to do as opposed to what I want to do. 


Whenever I need to be reminded of what can happen, I look at this picture, below, of myself.  I want to look and remember what I was going through when I took this picture.  I cry each time I see it; I was so, so scared. 



Me... April 2010...radiation dropped my weight from 225 to 153 in 2 months.
